Bristol Workshop – ‘A rough guide to seafood sustainability’

 

There is a real sense of momentum in sustainable seafood right now with the film End of the Line creating plenty of media attention. An upcoming Good Catch workshop, to be held in Bristol, can help you become part of this wave of change.  This workshop event aims to help chefs, restaurateurs and caterers make practical improvements to the sustainability of seafood they buy, use and promote.

 

Kindly hosted by Bristol-based restaurant Bordeaux Quay - a business with sustainability at its core – the workshop features several sessions, including:

 

  • • a sustainable seafood kitchen session and tasting – led by Barny Haughton of Bordeaux Quay
  • • practical Top Tips to improve seafood sustainability
  • • an overview of Marine Stewardship Council certification
  • • a Q and A panel – featuring leading chefs and restaurateurs

Introduction to Sustainability is a half day course that will provide you with a basic overview of the topic along with hands-on experience of undertaking a sustainability appraisal. This is the first of a rolling training programme and is aimed at those wanting a basic introduction to sustainability. The Biomass Energy Centre has produced a comprehensive list of suppliers of wood fuel (briquettes, logs, wood chip and pellet) which covers all areas of England, including the South West.

The list was produced in response to concerns from purchasers in buying reliable, local wood supply and, therefore contains reputable suppliers within the industry.
